Savory Pea Soup - 6, 12 or 18Qt. Roaster
2 cups dried yellow peas
2 qts cold water
1/2 lb salt pork, diced
1 onion, coarsely chopped
1/2 cup celery, chopped
2 carrots, thickly sliced
salt and pepper to taste
1/2 tsp Ground allspice
Pick over peas, soak overnight in large pan or according to package directions. Boil 10 minutes in enough water to cover. Drain and discard water.
Preheat Nesco® Roaster Oven to 425ºF. Brown salt pork, stirring frequently. Remove all but 2 Tbsp of drippings from salt pork. Add remaining ingredients. Stir to mix and cover.
Reduce heat to 350ºF until mixture bubbles around edges. Reduce heat to 300ºF and simmer about 4 hours.
If a smooth soup is desired, process in a blender or thicken with a mixture of flour and water.
