Easy Mexican Casserole - 4, 5 or 6Qt. Roaster

6 taco shells
2 cups chicken, cooked, chopped
1 cup (4 oz) Monterey Jack Cheese, shredded
1 cup picante sauce
1 can (8 oz) tomato sauce
1/2 cup (2 oz) Cheddar Cheese, shredded

Break taco shells into bite-size pieces. Spread half in lightly greased 8x4" loaf pan. Spread with half of chicken and half Monterey Jack cheese. Combine picante sauce and tomato sauce. Pour half over cheese. Repeat layers of taco shells, chicken, Monterey Jack cheese and sauce.

Place on rack in Nesco® Roaster Oven. Cover and cook at 350ºF for 40 minutes. Sprinkle with Cheddar cheese. Cover and continue to cook at 350ºF for 5 minutes.
