Minestrone Soup - 4, 5 or 6Qt. Roaster

4 cups beef broth
4 small red potatoes, peeled, coarsely diced
2 medium carrots, peeled, thinly sliced
1 small onion, chopped
1 stalk celery, thinly sliced
2 large tomatoes, peeled, seeded, coarsely chopped
15 oz can stewed tomatoes
2 oz can tomato paste
1/4 cup elbow macaroni, uncooked
10 oz pkg mixed frozen vegetables
15 oz can Great Northern Beans
2 slices fried bacon, crumbled
salt and ground black pepper to taste

Preheat Nesco® Roaster Oven to 375º F.

Add broth and fresh vegetables into preheated cookwell. Cover; cook 10 minutes. Add stewed tomatoes, tomato paste and macaroni. Cover; cook 20 minutes.

Add remaining ingredients. Reduce temperature to 300º F. Cover; cook 30 to 45 minutes or until macaroni is tender and soup is heated through.

Serves 4 to 6
